    5 weeks of secondary sounds too long, maybe 5-7days then 5-6 weeks of condition in the keg sound about right. Most of the fermenting is done in primary, if it bubbles over (some do) let me know and I'll give you some ideas for that. I'll ferment for about 7 days primary then keg it and hope for a little more fermentation to carbonate it (you won't need priming sugar either w/kegs). With kegs you can get it in there sooner, they won't blow like bottles will.
    Think I'll brew this weekend, I'm way overdue.

      huh, i think our directions said to ferment it in the secondary for the 5 or so weeks and then keg and CO2 it, ill have to double check though.

      What are you gonna brew Tom?

        Nothing wrong with Following the directions.

        I'm thinkin a Belgium style, "Blanc De Burgess".

        The sooner you get it into the keg and out of the light the better. Because the keg can hold a lot of pressure you can let final fermenting happen there. For me it not a choice since I use a 20gal conical fermenter, no secondary. I just make sure my gravity is down to about where it should finish then keg, about 7-10max days. When I'll do a really high gravity (1080+) I usually have to pitch a second yeast starter to get the gravity down to low 20's. Sometimes up to 14days for that one.

          Wow, thats awsome, yeah for now weve been keeping the fermenter in a dark little closet away from the light.

          Where did you get your fermenter from? whatd it run you (if i can ask)

            Through my bro-in-laws former shop some years back. About $250 from this guy, but mine has a metal stand (older vintage)
