I recently put a 2" lift under my 1999 WJ Grand Cherokee. I now need new tires and want to put on a larger size. With a 2" lift I was told I can put on a 31" diameter, or 265/70/16 Tire. Will this be ok or will it cause rubbing in the wheel wells? Any thoughts?

I'd stay away from 16" rims. I made the mistake of going with 16" rims once, and found that although there are a lot of 16 tires out there, they mostly carry a load rating of "D" or "E". I found that I could pretty much completely deflate my tires, and the side walls would still be so rigid it was like running trails with 30 pounds of air pressure still in them. Just something to think about...

I believe his Grand came stock with 16's thats why he is staying with 16's. I would think with 2 inches you can fit 31's fairly easily. You might have a little rubbing at full lock and stuff. But you can adjust steering stops and add bump stops, if needed.
