That key symbol is indicating the ignition key you're trying to use either has a defective ID chip inside, no ID chip at all, or it hasn't been programmed properly.
Your Grand Cherokee has a SKIM (Security Key Immobilizer Module) anti-theft security system which requires a SKIM type ignition key to generate a specific security code when interrogated byt the SKIM key reader mounted inside the steering column.
So my guess is you had a new key made that doesn't have the proper SKIM (security) chip inside, or the chip in the key has gone bad. This can be further verified by the engine stopping 1-2 seconds after it starts... indicating the SKIM security system has detected an invalid ignition key and shut the engine off.
