define good to eat? as in good for you or good (eh) tasting?

lettuce and vegetables are cheap to buy ... if you have a Costco membership be sure to get your meat there instead of the grocery store. Quaker quick oats are cheap too for breakfast. Hunt's spaghetti sauce is usually $1-ish plus meat/noodles, a quick stir fry which is heavier on the veggies plus some rice, or bake a potato and put some cheese on it! yum! I recently learned to cook so if you want to actually cook something I can send you a few beginner recipes. Who knows, you may impress the ladies!:gun:'99 TJ Sport:gun:

Here's a few fun ones ...
Chex Mix
MAKES: A big bowl
INGREDIENTS:
6 tablespoon butter
2 tablespoon Worcestershire
1 1/2 teaspoon seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups Corn Chex (the off-brands work just as well)
3 cups Rice Chex
3 cups Cheerios
1 cup pretzels
1 cup mixed nuts
METHOD:
- Combine butter, Worcestershire, salt and powders in a small saucepan and heat until melted, stirring frequently.
- Evenly coat cereal combination with sauce in a large, microwave-safe bowl.
- Microwave at 50% power for 6-9 minutes, stirring every 2 minutes.
- Cool and cover tightly.
TIP: Careful, it will burn! Microwave time is approxmate. Check often, it will burn!
RECIPE: Fettuccine Alfredo
MAKES: 4
INGREDIENTS:
1 1/2 cups heavy cream
2 tbsp unsalted butter
1/2 teasp ground black pepper
9 oz fresh fettuccine
1 1/2 oz parmesan cheese (3/4 cup)
1/8 teasp grated nutmeg
METHOD:
Fresh pasta is the best choice for this dish; supermarkets sell 9-ounce containers of fresh pasta in the refrigerator section. When boiling the pasta, undercook it slightly (even shy of al dente) because the pasta cooks an additional minute or two in the sauce. Note that Fettuccine Alfredo must be served immediately; it does not hold or reheat well.
1. Bring 4 1/2 quarts water to rolling boil, covered, in large stockpot or Dutch oven. Using ladle or heatproof measuring cup, fill each individual serving bowl with about 1/2 cup boiling water; set bowls aside to warm.
2. While water comes to boil, bring 1 cup heavy cream and butter to simmer in 3- to 4-quart saucepan over medium heat; reduce heat to low and simmer gently until mixture reduces to 2/3 cup, 12 to 15 minutes. Off heat, stir in remaining 1/2 cup cream, 1/2 teaspoon salt, and pepper.
3. Add 1 tablespoon salt and pasta to boiling water; cook pasta until just shy of al dente. Reserve 1/4 cup pasta cooking water, then drain pasta. Meanwhile, return cream mixture to simmer over medium-high heat; reduce heat to low and add pasta, Parmesan, and nutmeg to cream mixture. Cook over low heat, tossing pasta with tongs to combine, until sauce coats pasta and pasta is just al dente and cheese is melted, 1 to 2 minutes. Stir in reserved pasta cooking water; sauce may look rather thin but will gradually thicken as pasta is served and eaten. Working quickly, empty serving bowls of water; divide pasta among bowls, tossing pasta to coat well with sauce. Serve immediately.
RECIPE: Freedom Onion Soup
MAKES: 2-3 servings
INGREDIENTS:
1tbsp butter
1 white onions, sliced
2 - 14oz cans Swanson beef broth
a dash of garlic powder
a few sprinkles of grated parmesan
a few slices of french bread
6 slices Swiss cheese
METHOD:
1. Sauté onions in melted butter in a large soup pot or saucepan for 15 to 20 minutes or until onions begin to brown and turn transparent.
2. Add beef broth and garlic powder to onions. Bring mixture to a boil, then reduce heat and simmer uncovered for 1/2 to 1 hour. Add the grated parmesan cheese in the last 10 minutes of cooking the soup.
3. When soup is done, preheat oven to 350 degrees and toast the French bread slices for about 10 to 12 minutes or until they begin to brown. When bread is done, set oven to broil.
4. Build each serving of soup by spooning about 1 cup of soup into an oven-safe bowl. Float a toasted slice or two of bread on top of the soup, then add Swiss cheese on top of that.
5. Place the soup bowl on a baking sheet and broil for 2 to 3 minutes or until the cheese begins to brown.
RECIPE: Fried Rice
MAKES: 4
INGREDIENTS:
1 cup rice
1 cup peas (ew!)
2 tbsp grated carrot
2 eggs, beaten
1/2 cup diced onion
1 1/2 tbsp butter
2 tbsp soy sauce
1 dash pepper
METHOD:
COOK rice following package instructions. Let rice cool in fridge.
SCRAMBLE eggs and chop into small pea-size bits while cooking.
ADD peas, carrot, egg, and onion to rice when it reaches room temperature. TOSS.
MELT butter in large frying pan. ADD rice mixture and add soy sauce and pepper.
COOK for 6-8 minutes over high heat, stirring often.
RECIPE: Twice Baked Potatoes
PREHEAT: 400°
MAKES: 8
INGREDIENTS:
8 russet potatoes
8 tbsp unsalted butter (melt 2 tbsp)
12 cups broccoli florets, cut
2 teasp lemon juice
1/2 teasp powdered mustard (optional)
12 oz shredded cheddar cheese (2 cups)
1 cup onions, thinly sliced
16 pieces bacon, cooked, thinly sliced
1 cup sour cream (optional)
1/2 cup half-and-half
ground black pepper
METHOD:
To serve as a main dish, use potato flesh from both halves and combine into one. Pile it high like the photo shows, and add a little extra cheese.
== TO COOK THE POTATOES ==
1. PREHEAT oven to 400°
2. SCRUB and dry potatoes. RUB lightly with vegetable oil. BAKE on foil-lined sheet for 60 minutes, or until cooked through.
3. COOL potatoes for 10 minutes.
== TO COOK THE ADD-INS ==
1. HEAT 2 tablespoons butter in a 12-inch skillet over medium-high heat until foam subsides; lower and add garlic and onions. Cook until very lightly browned.
2. ADD 2 tablespoons water, then add broccoli and cook, stirring occasionally, until broccoli is lightly browned, about 2 minutes. Add a little more water if pot is dry, then cover and steam for about 1 minute, or until tender.
3. REMOVE from heat and stir in lemon juice.
4. HALVE each potato lengthwise. Using soup spoon, scoop flesh from each half into bowl, leaving about 3/8" thickness of flesh. PLACE shells cut-sides up on baking sheet and return to oven until dry and slightly crisp, about 10 minutes.
5. Meanwhile, MASH flesh with fork until smooth. STIR in melted butter, powdered mustard (if desired), half of the cheese, sour cream (if desired), bacon pieces and half-and-half.
6. FOLD in the broccoli-garlic-onion mixture, being careful to keep broccoli in tact.
7. REMOVE shells from oven. Mound filling into shells, sprinkle with remaining cheese.
8. When making double portions per shell, bake for about 4 minutes to ensure cheese is melted throughout.
9. BROIL until spotty brown, about 5 minutes, less if baked in step 8.
10. Take a photo of your masterpiece and dig in!

Ramen, ramen, ramen... I'm done with college, make a decent (ok, pretty good) living, but I still eat ramen often!!! I'm trying to maximize the Jeep budget while still affording this condo... living in Oceanside is expensive!!! I'm also saving for a wedding, which means more ramen!!!
EDIT: Oh, and throw an egg in the ramen when it's just about time to put the flavor in... makes it thicker, less like soup, and more like a meal.If we aren't supposed to eat animals, then why are they made out of meat?

One of my favs from back in the bachelor days (don't think it really has a name!):
Boil up two packages of top ramen noodles with the flavor packets. Drain completely after the noodles are cooked (ready in three minutes! LOL). Put a little bit of oil in a frying pan (a teaspoon or so). Throw the noodles in the pan (roughly at medeium heat), add a couple of eggs, salt and pepper, and the all important Tobasco Sauce (I like hot so I do about 12-14 "shakes of the bottle"). Mix it all up until the eggs are cooked, throw it in a bowl and enjoy! Sort of like fried rice, but fried noodles instead! :thumbs_up :thumbs_up
EDIT: I'm sensing a ramen trend here!-Bob
